Good Monday Morning to ya friends! Well, today’s gonna be a good day. Yes, Healthy Bite recipes and giveaways are back in action for 2016! And to kick it off, I have one of my original gluten free energybites recipes to share, plus a pretty niftygiveaway! Yep, Gluten Free Muesli Energy Bites with Cranberries. But there’s more to these gluten free muesli energy bites that make them just bites and just snacky. You’ll like my “extras” I included in the recipe too, I promise.

But first, the story of how these gluten free muesli bites came about and why. Because, let’s face it, every bite recipe creation needs agood back story, right?

So in ourfirst year of marriage tothe kiwi, back in 2008, I had just been diagnosed with gluten sensitivity. At that time, the states did not have many gluten free options. And gluten free muesli (which was ourfavorite breakfast) did not exist. AT ALL! It wasn’t until we visited New Zealand again (I think it was my second time there),that I discovered a WHOLE ARRAY of specific gluten free foods, restaurants, etc. You see, Celiac was (and still is) more prevalentin New Zealand, so they are used to accommodating to those on a gluten free diet. That being said, you can imagine the excitement when I discovered multiple types of gluten free cereals/oats/bars, etc. And then…. I tried to packthem all in my suitcase to bringback tothe states, but unfortunately, I didn’t have enough room. Darn!

So instead, I took note of the ingredients and promised myself I’d try making my own version of these gluten free goodies once we arrived back home. Hence these gluten free muesli energy bites. One of my very first HEALTHY BITE recipes. And one of our favorite energy bites for proper fuel, breakfast, etc.

Okay, so you ready to find out what is in them and how to make these SUPER HEALTHYgluten free muesli energy bites?

Well, for one, muesli is a cerealconsisting of grains (raw), nuts, dried fruit, and seeds. But in order to make these gluten free, we are using rawgluten free oats and combining them with almond flakes/slivers. The key here to blend (in a Vitamix) them together to make one base.

Then you can add in your dried fruit, nuts, and seeds. For this gluten free muesli, we are using pumpkin seeds, almond meal, and dried cranberries/berries. All of these are naturally sweetened and then spiced with cinnamon, nutmeg, and a little sea salt. It smells heavenly!

Once you make your gluten free muesli mix, you can them combine it creamy almond butter, honey or agave nectar, sea salt, and pure vanilla. I’ve also made these with sunflower seed butter. I wouldn’t use peanut butter as it takes away the perfectly sweetenedand spiced muesli. Just so you know.

Simple, yes. But you will also be surprised at how much flavor and texture comes out of this little bite! All due to the “blending” process.

Description

Gluten Free Cranberry Muesli Energy Bites (Vegan, NO Bake)

  • ¾ to 1 cup gluten free oats (use 1 cup if batter is too wet after mixing)
  • ¼ cup sliced almond
  • ½ c coconut flour – about 72 grams weighed (see notes for other options)
  • cup almond butter (sunflower seed)
  • 23 tablespoons pumpkin seeds
  • cup dried cranberries or berries
  • 1 teaspoon vanilla
  • 2 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Dash of sea salt
  • ¼ cup honey or agave nectar

Instructions

  1. First, combine the oats and almonds in a high-blender. Pulse until almonds and oats are fine-texture, but not ground.
  2. Next, in large bowl, add in all the dry ingredients. Mix together.
  3. Add almond butter and honey and mix with a spoon. Then add vanilla. Mix again, using your hands if needed. (It’s easier using your hands to mix after a certain point.)
  4. Roll dough into bite size balls. Roughly 2 tablespoons or 18 grams each. Place on a parchment-covered baking sheet. Makes between 20-22 balls.
  5. Freeze or keep in refrigerator to maintain freshness.

Notes

If you don’t have coconut flour, you can use protein powder or peanut flour but make sure it’s the same grams and very fine.

But in all seriousness friends, I don’t think I could have beenable to keep Healthy Bites going (for 7 years now) without a high quality reliablekitchen appliance, such as a Vitamix. I’ve used a vitamix to make all varieties of Healthy Bites for over 5 years now and you better believe I will continue! Because like I mentioned, blending and CONSISTENCY are key for perfect bites.
