Wasabi paste. Wasabi, a green root known as rhizome, is Japanese horseradish and can range from seriously spicy to milder (for fresh wasabi root). Many pastes you run across will also contain horseradish and a few other ingredients. That's ok. Read the label; some may contain a bit of oil. Substitute with wasabi powder, often a combination of wasabi, horseradish, ginger, or mustard powder.

Soy sauce. Use a high-quality soy sauce or Tamari if you want it gluten-free. I have not tried this dressing with light soy sauce, but the amount can always be adjusted if you want more soy sauce flavor.

Rice vinegar. Rice vinegar, also known as rice wine vinegar, is mellow and slightly sweet. Use 1 ½ tablespoons of apple cider vinegar if you need a substitute. If you don't use vinegar, fresh lime juice, or lemon juice with added sweetener, that works, too.

Date paste. A whole food, plant-based sweetener, date paste, thickens the dressing. Making date paste is super easy, but it’s also readily available. Maple syrup or brown rice syrup are the best substitutes.

Garlic. I recommend garlic cloves for fresh flavor and texture. Add 1 teaspoon of garlic powder if that's all you have on hand.
